BullDog Fatty’s is more than a business name — it’s a piece of my story, my family, and the memories that shaped the way I see food, tradition, and bringing people together. Every part of the name carries meaning, history, culture, and love.

Brooklyn Born
Growing up in Brooklyn, everyone knew me as “Bulldog.” It was the nickname that followed me through childhood — a symbol of toughness, loyalty, heart, and never backing down. Brooklyn teaches you grit. It teaches you to work hard, take pride in where you come from, and always show up for your people. That nickname became part of my identity long before it became part of this business. Today, BullDog represents the hardworking spirit, resilience, and family pride behind everything we create.
But the soul of BullDog Fatty’s comes from “Fatty” — inspired by my grandmother, lovingly known in our family as “Fatso.” To us, that name meant warmth, laughter, comfort, and unforgettable food. She was the heart of the kitchen and the heart of our family. Her cooking wasn’t just about feeding people — it was how she showed love.

The Smells from the Kitchen
Some of my strongest memories are tied to the smells coming from her kitchen. You could walk into the house and instantly know she was cooking. The smell of thin veal cutlets frying in olive oil would fill every room — crispy on the outside, tender inside, with garlic and olive oil creating a scent that still brings me back to childhood in an instant. Even today, one smell of veal frying takes me right back to standing near her stove waiting for the first piece to come out of the pan.
Then there were her shells with ricotta and sauce — simple, traditional, and somehow perfect every single time. She never needed recipes or measurements. Everything came from instinct, experience, and generations of family tradition living in her hands. The ricotta was creamy, the sauce rich and slow-cooked, and every bite tasted like home.
But maybe the memory that defines her most was the sauce itself. There was always sauce in her fridge. Always. It felt endless. A pot simmering on the stove or containers stacked away in the refrigerator were just part of life growing up. As a kid, I’d open the fridge, grab a piece of fresh mozzarella, and dunk it right into the cold sauce when nobody was looking. That was happiness. That was comfort. That was family.

Both Sides of the Family

That “never-ending sauce” became a symbol of everything she represented — abundance, love, generosity, and a home where nobody ever left hungry. Her kitchen was always open. Her table always had room for one more person.
My passion for cooking was also deeply influenced by my other grandmother, especially during the holidays. Growing up, I was always by her side in the kitchen helping prepare family meals for gatherings and celebrations. The holidays weren’t just events — they were experiences built around food, tradition, and family togetherness. I remember helping prep ingredients, carrying trays, learning the rhythms of a busy kitchen, and watching how food could bring an entire family together around one table.
Those moments taught me patience, pride, and the joy that comes from cooking for people you love. The holidays were loud, warm, crowded, and filled with incredible aromas coming from every corner of the kitchen. Those experiences planted the seed for the passion I still carry today. Long before BullDog Fatty’s existed, those kitchens taught me that food creates memories people carry with them forever.

My Father-In-Law
While the Italian side of BullDog Fatty’s honors my grandmothers and my Brooklyn upbringing, the Puerto Rican side of our kitchen is deeply connected to my father-in-law and the incredible influence he had on me. Through him, I gained a deeper appreciation for Puerto Rican culture, family traditions, and the way food becomes the center of every gathering.
He taught me that Puerto Rican cooking isn’t just recipes — it’s pride, music playing in the background, loud conversations around the table, and food made from the soul. From slow-cooked meats and rice dishes to pastellios, sofrito, and recipes packed with bold flavor and history, his influence helped shape the identity of BullDog Fatty’s just as much as my own childhood memories did.
Many of the Puerto Rican-inspired dishes we create today are made in memory of him and the love he poured into his family. His influence expanded my understanding of food and family, teaching me that culture lives through recipes passed down from generation to generation. Every Puerto Rican dish we make carries a piece of his spirit, his traditions, and the memories we shared around the table.

BullDog Fatty’s became a blend of all those influences — Brooklyn grit, Italian comfort, Puerto Rican soul, and old-school family traditions passed down through generations. Every recipe we make tells part of that story. From olive oil crackling in a pan, to sauce simmering for hours, to the smell of sofrito filling the kitchen, this business was built from memories that shaped who I am.
